This is another simple and tasty light summer pasta with very few ingredients which come together for a lovely dish which is perfect for the warmer months- spaghetti, courgettes, onion, chilli, olive oil and parmesan
So quick, easy and tasty -enjoy!
Ingredients
125 gms spaghetti pasta – about quarter of a 500 gm packet, but don’t be too fussy!
3 courgettes, not too large – slice into ribbons
1 large onion
1/2 tsp chilli paste, such as the MasterFoods paste from your supermarket. You can add a tad more if you like
Olive oil
100 gms or more of shaved or grated parmesan
Cooking instructions
- Bring a pot of water to the boil and cook the spaghetti as per the packet instructions (about 8-9 mins)
- In a non-stick frypan, drop a small amount of olive oil and on low-med heat, gently fry the onion and chilli paste until soft and then add the courgettes, slightly increasing the heat and cook for a few minutes until the courgettes and onions are just starting to brown. Season with some salt and cracked pepper
- Remove the spaghetti, drain and put in a serving dish and add the courgette, onion and chilli. Mix together
- Throw in a swig of olive oil and half the shaved parmesan on the top of your dish – put the rest of the parmesan on the dining table with some cracked pepper
