Strawberries, hot honey, cucumber, mint and sheep feta salad

Who doesn’t love strawberries, but have you tried a salad with strawberries as a main component/ingredient? If not, while they are still in season, why don’t you try this dish out for lunch or light dinner. You will most likely also be introducing hot honey into your pantry!

Our dear friend Julie enjoyed a similar dish at a restaurant and it appealed to me so have put together this recipe based on an image from the restaurant

Takes no more than 10 minutes to prepare and another plus is that you can tweak the balance/quantities of the main ingredients to either your palate or what you have in your frig and/or garden – strawberries, cucumber, mint and feta

Very yummy and ideal at this time of the year – enjoy!!

Hot honey – in the likely event you haven’t used this previously, wee hint. This has a real bite – if using the brand I used, suggest you scrape off the top quarter inch/crust as this has a real “kick” and may put you off!!

 

Ingredients

2 punnets of strawberries – cut into halves

3 Lebanese cucumbers – cut into slices and halved or quartered

1 packet sheep (or goat) feta – cut into cubes as per image

Sesame seeds – much or little as you want – gently toasted

Mint leaves – 1 cup or more, Break into pieces, some small, some slightly larger

Hot honey - I used Apostle Lavendar and Rosemary Hot Honey which I purchased from Cazador deli on Dom Road – refer image below. You can purchase other brands in most supermarkets.

Mandarin wedges or sliced nectarines (optional). If you want your salad more fruity, add. Not essential at all

1/4 cup of lime or lemon juice

Zest from the lime/lemon

Olive oil – 2-3 tablespoons

Hot honey

 

Instructions

  1. First make the dressing by finely chopping a quarter of the mint, then adding it to a bowl along with the lime juice, zest and olive oil. Add a pinch of salt and taste
  2. Slice your strawberries and cucumber and add them to the bowl with the dressing.  Gently toss everything until well combined.
  3. Add the feta and mint
  4. Gently drizzle some of the hot honey…not too much initially
  5. Top with the toasted sesame seeds
  6. Gently mix and add more dressing or hot honey to taste
